Pork Satay

Pork Satay
The classic Thai-style of grilling small pieces of pork. The fragrance alone beckons to your senses. A perfect meal that can be prepared ahead of time and cooked quickly, leaving you time to spend with your guests instead of in the kitchen. You can cut the marinating time to suit your schedule, it will still taste delicious.

For the Marinade:
1½ cups coconut milk
¼ cup peanut butter
2 tablespoons lime juice
¼ cup soy sauce
4 cloves garlic, minced
2 Thai chile peppers, seeded and chopped fine
2 tablespoon cilantro
sea salt
1½ pounds pork tenderloin, cut into one-inch thick cubes
wooden skewers, soaked in water

Combine all ingredients in a medium bowl, then add pork and allow to marinate 2 to 4 hours.

For the Sauce:
1 tablespoon vegetable oil
½ cup finely chopped onion
2 cloves garlic, minced
1 Thai red chile pepper, chopped fine ¼ cup soy sauce
2 tablespoons lime juice
1½ cups coconut milk
1 teaspoon ground coriander
1 teaspoon cumin
1 cup crunchy peanut butter
1 tablespoon minced fresh cilantro


Heat the oil in a heavy skillet and sauté the onion, garlic and chile over medium heat for about four minutes.

Stir in the soy sauce, lime juice, coconut milk, coriander, and cumin, then mix thoroughly.



Blend in the peanut butter and bring the sauce to a simmer over low heat. Stir constantly.
Stir in the minced fresh cilantro and remove from heat.

Preheat the grill.

Remove the pork from the marinade and thread onto skewers.

Grill for 7 to 8 minutes or until cooked through. Serve topped with the sauce.
