Ramp and Cheese Dip

Ramp and Cheese Dip
This is a wonderfully simple recipe that's filled to the max with that excellent wild ramp flavor. It's easy to put together, and will get rave reviews.
Ingredients:

1 8-ounce package softened cream cheese
2 cups sour cream
20 fresh Ramps
½ teaspoon cayenne pepper
½ teaspoon sea salt



Directions:


Blanch 15 of the ramps in hot water, including the tops. Cool, then chop finely.


Whip the sour cream and cream cheese together, add the salt, pepper, and ramps. Stir thoroughly.


Take the 5 remaining raw ramps and chop finely. Add to the mixture and stir thoroughly.


Serve with pieces of French bread.
