Ramps Piquant
The recipe is basically a flavor explosion emphasized by texture. Not subtle, this is a wonderful way to add interest and depth to an otherwise "not-particularly-interesting" meal. For example, regular every day pork shops become a gourmet experience when served with ramps piquant. Ditto a steak dinner. Ditto roast chicken. Use this recipe to dress up ordinary things and turn them into an adventure for your palate.
Ingredients:

1 cup grated sharp cheddar cheese
2 cups fresh Ramps, cleaned, trimmed
1/2-cup ramp broth
1 tablespoon Worcestershire
3 tablespoons white wine vinegar
3 tablespoons butter
Sea salt & freshly ground Black Pepperto taste
6 slices French bread, toasted


Preparation:

Boil the ramps in salted water until tender (about 5 minutes).
Reserve 1/2-cup hot ramp broth.
Over low heat, melt the cheddar cheese in the ramp broth. Add the Worcestershire, vinegar, and butter.
Stir the cleaned ramps into the cheese sauce and reheat. Add salt and pepper to taste. Serve hot over crisp toast.
