Raspberry Valentine Cookies

Raspberry Valentine Cookies
The red raspberry jam shows through the heart shape in the top layer. You can cut these into any shapes you want and serve them any time of the year! Use a different colored jam for variety. How versatile!
Ingredients:

3 cups all purpose flour
5 egg yolks
1 cup unsalted butter, softened
½ cup plus 2 tablespoons sugar
½ teaspoon vanilla extract
2 egg whites, beaten lightly
1/3 cup ground walnuts
1 ½ cup seedless raspberry jam



Directions:


Mix the flour, egg yolks, butter, ½ cup sugar, and vanilla extract in a large bowl. Knead the mixture until it forms a soft dough.

Chill for at least 30 minutes.


On a floured surface, roll the dough until it's about 1/8 inch thick. Cut a heart for the bottom of the cookie sandwich. Cut another heart the same size for the top of the cookie, but cut a smaller heart out of the inside of it.

After baking, this "heart outline" will be the top layer for your cookie sandwich.


Brush the tops with egg whites. Mix the walnuts with 2 tablespoons of sugar and sprinkle on the cookie tops.

Place the cookies on an ungreased cookie sheet and bake in a 350 F oven for about ten minutes. Cool.


Spread the bottom hearts with a layer of jam. Place the top layers on.
