Savory Chestnut Patties
Equally good as a main dish or side, these savory chestnut patties are loaded with both nutty flavor & pleasing texture.

Honorable Mention 2015 Chestnut Recipe Contest

3 pounds fresh chestnuts, roasted, shelled and peeled
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1 large egg, beaten
6 tablespoons dry Italian-style bread crumbs, divided
2 tablespoons minced green onion
3 tablespoons extra virgin olive oil


Place chestnuts in a food processor and process until consistency of mashed potatoes. Place mix in a large mixing bowl and add cheese, salt, egg, 3 tablespoons bread crumbs and onion. Blend well.

Put remaining 3 tablespoons bread crumbs in a shallow dish. Divide chestnut mixture into 12 even portions (about a heaping tablespoon each) and use your hands to shape into the shape of small hamburger patties. Dredge each patty lightly in bread crumbs.

In a large non-stick skillet, heat oil over medium-high heat. Add patties and saute 2-3 minutes on each side or until golden brown. Drain briefly on paper towels. Serve hot or warm.

Makes 12. Serves 4.
