Scottish Lace Wafers
Here's one of those great classic recipes that is perfection in its utter simplicity. The butter and sugar lightly coat the oat mixture and turn into both chewy butterscotch and a crisp glaze. As the name suggests, the oats form a lacy filigree.
Ingredients:

1 1/4 Cups oatmeal
1/2 Cup packed light brown sugar
1/4 Cup Unsweetened shredded coconut
1 Tablespoon unbleached all-purpose flour or barley flour
1/2 Teaspoon grated nutmeg or ground mace
1/4 Teaspoon Sea salt
4 Tablespoons (1/2 stick) unsalted butter, melted
1 Large egg, beaten
3/4 Teaspoon pure vanilla extract


Preparation:

Preheat the oven to 350 degrees F. Butter 2 baking sheets and set aside.
Combine the oatmeal, sugar, coconut, flour, nutmeg, and salt in a medium bowl.
Combine the butter, egg, and vanilla and mix into the dry ingredients.
Immediately drop from a teaspoon in rounds, about 2 inches apart, on the baking sheets. Flatten with a fork. Bake for 8 to 10 minutes or until browned.
Let cookies cool on the baking sheet for 2 minutes, to become firm. Remove to a wire rack and cool.
