Sesame-Ginger Noodles with Shrimp & Scallops

Sesame-Ginger Noodles with Shrimp & Scallops
An Asian-inspired recipe that is simple to prepare. The noodles soak up the flavors from aromatic spices and seafood.
Ingredients:

1/4 cup honey
1/4 cup unseasoned rice vinegar
2 teaspoons fresh ginger, peeled and minced very small
2 teaspoons soy sauce
2 teaspoons chili paste
1 teaspoon sesame oil
1 teaspoon orange zest
2 tablespoons fresh cilantro
2 tablespoons fresh mint
1 pound angel hair pasta or rice noodles
1/2 pound of shrimp, peeled and deveined
1/2 pound fresh scallops
lime juice, to taste (optional)
1 tsp. tamarind paste (optional)



Directions:


Combine all ingredients except the noodles, the shrimp,  the scallops, and lime juice (if using). 

Let the sauce simmer very gently for at least an hour. Add water if it begins to dry out.

Cook the shrimp and the scallops in the sauce for about ten minutes. Add water if it begins to dry out.


Cook the pasta according to package directions,or soak the rice noodles in hot water for about 20 minutes, then drain well.


Mix the sauce with the noodles and toss thoroughly to combine all ingredients. Squeeze fresh lime juice on top.
