Shishito Chile Relleno Casserole
East meets Southwest! If you like chile rellenos, but hate all the bother of making them, try this easy casserole version. The big flavor of tiny shishito peppers couldn’t be better in this twist on the Mexican classic. Enjoy hot from the oven or at room temperature, it’s even better the next day.

5 eggs
1 1/2 cups milk
3 Tbsp all purpose flour
1/2 tsp pepper
1/4 tsp salt
1/2 tsp cumin
1/2 tsp chili powder
1 pound Shishito peppers
1/2 lb shredded Cheddar cheese
1/2 lb shredded Monterey Jack
5 green onions, sliced thinly



Thread the shishito peppers onto skewers and brush with a little oil. Grill over medium-high heat, turning frequently, until lightly charred here and there. Set aside to cool briefly, then pull off the stems and split down the middle with a sharp knife. You can also pull off any loose bits of skin and some of the seeds if you want, but it’s really not necessary.


Beat the first 7 ingredients together in a medium bowl to blend and set aside. Using your hands, mix the two grated cheeses together in a large bowl.


Lightly grease a 13 x 9-inch glass baking dish. Arrange 1/3 of the peppers in the prepared dish, covering the bottom completely. Sprinkle the peppers in the dish with 1/3 of the cheese. Top with 1/3 of the sliced green onions.


Repeat layering twice, ending with the cheese and green onions.


Pour the egg mixture over the top of the layered peppers and cheese. Let stand 30 minutes. (The dish can be prepared to this point a day ahead. Cover and refrigerate. Bring to room temperature before baking.)


Preheat the oven to 375 F.


Cover the casserole with aluminum foil and bake for 15 minutes. Remove foil and continue baking for another 30 minutes or until casserole is slightly puffed in center and golden brown on edges.


Remove from the oven and allow to stand for 20 minutes before serving. Serve with warm tortillas, salsa of your choice and sour cream, if desired.
