Sofia's Selection Olives - high on flavor and and fun, very low in salt


Sofia's Selection started as a hobby about 15 years ago. A few years back, a chef friend was so impressed with the taste and flavors that he suggested selling them. One thing led to another and production began in February 2012.  


Sofia's Selection Marinated Green Olives are handcrafted in small batches in a small, family-owned facility in Warren, Michigan, from California-grown green Sevillano olives (also known as Sicilian), and a bold and spicy marinade of vinegar, garlic, sugar, salt and a secret blend of spices. This unique process produces an exceptional olive, full of bold flavor and olive personality.


Eat as a snack, use in martinis, as a garnish, in salads, in tapenade or on a pizza.


Shelf stable 18 months. Refrigrate after opening

Chicken Tajine with Olives and Preserved Lemons
Tajine (or tagine) vies with couscous as Morocco's national dish. Tajine is both the name for a vast number of stew-like dishes and the earthenware utensil in which they are cooked. Fish, chicken, lamb or other meats are simmered with an assortment of vegetables, fruits, olives, lemons, herbs and spices to produce richly fragrant, tart, spicy and sweet flavors. Outside of Morocco, traditional tajine pots are hard to find, but we've found that an ordinary covered pot or casserole will work just fine.

Orzo with Shrimp, Tomato Sauce, and Feta Cheese
A rustic, comfort food that is easy to prepare and extremely versatile. The hot orzo softens the bits of Feta cheese to a creamy consistency, making the combination especially appealing when served warm. But it's good at room temperature too, for those hot summer days...and nights.

Try substituting goat cheese for Feta, or green olives for the Kalamatas, adjust the amount of chile peppers to suit your taste.

Marinated Green Olives with Duck Prosciutto
What is more Spanish than the olive? This delightfully simple appetizer is very reminiscent of Spanish-style tapas, small bite-sized portions of savory foods, usually eaten along with a glass of wine. If you purchase good quality olives which have already been marinated, half the work is already done. If you've been extra ambitious, you can use your own Cured Green Olives. But no matter how you prepare the olives, the end result will be wonderful.
