Mix all ingredients except Panko, eggs and cooking oil. Adjust seasonings to taste.
Cut each morel on one side, open slightly and stuff - it takes about 1-2 Tbsp of stuffing per morel.
Heat oil in a large skillet over medium heat.
Dip each morel in beaten egg. Coat each morel with Panko and place in the pan, making sure not to crowd them.
Sauté the morels, turning until all sides are golden brown.
Serve with Sweet Chilli Sauce and/or Soy Ginger Dipping Sauce.
