Stuffed Morel Mushrooms
Third Runner Up, Earthy Delights 2009 Morel Recipe Contest
Ingredients:

About 1 lb fresh morels, as large as you can get them, cleaned

Stuffing:
2 small pkgs Oriental Bean Thread Noodles, soaked & cut into short threads
1/4 cup shredded carrot
1/2 cup finely chopped fresh baby spinach
6 green onions, green part only, fine diced
2 cloves garlic minced very fine
1 Tbsp minced fresh ginger
4 Tbsp sprouts any choice
3 Tbsp soy sauce
1 tsp sugar of choice

Panko (Japanese bread crumbs)
2 eggs, beaten
Cooking oil of choice

Directions:

 

Mix all ingredients except Panko, eggs and cooking oil. Adjust seasonings to taste.


Cut each morel on one side, open slightly and stuff - it takes about 1-2 Tbsp of stuffing per morel.


Heat oil in a large skillet over medium heat.

 

Dip each morel in beaten egg. Coat each morel with Panko and place in the pan, making sure not to crowd them.

 

Sauté the morels, turning until all sides are golden brown.

Serve with Sweet Chilli Sauce and/or Soy Ginger Dipping Sauce.
