Sweet & Sour Green Tomato Tatin with Goat Cheese
If you haven't ventured yet into the world of goat cheese, then
now's the time to make the big plunge. The first thing to
understand about goat cheese is that there are many, many
different kinds. The one thing they tend to have in common
(though not without exception) is a wonderfully creamy texture
and a rich, creamy flavor.
Ingredients:
4 green tomatoes
1/4 cup sugar
4 cloves garlic in the skin (unpeeled)
1/2 cup champagne vinegar
4 ounces goat cheese
4 ounces heavy cream, whipped to stiff peaks
1/2 baguette French bread
baby spinach
lemon juice
extra virgin olive oil
Preparation:
Preheat oven to 300 degrees F .
Cut the tops off of the tomatoes.
Use a small, heavy saucepan to
melt the sugar over medium heat. When a light caramel is formed,
add the tomatoes cut side down. Add the salt, garlic cloves, and
champagne vinegar. Bring to a boil and reduce the liquid by
about one-third.
Place the pan in the oven until the tomatoes
are soft (about 45 minutes).
Soften the goat cheese in a bowl. Fold in the whipped cream
using a rubber spatula. Season with salt and white pepper.
Cut
the bread into slices and brush with olive oil, salt, and
pepper. Place under the broiler to brown.
Dress the spinach in lemon juice and olive oil. Place a small
mound of spinach on each plate.
Using spoons to form a mound of
goat cheese on the spinach.
Turn the tomato over and place next
to the salad with a clove of garlic. Spoon the caramel around
the tomato and drizzle with extra virgin olive oil.
Place a
piece of grilled bread on each plate.
