Description 

Tamarind is commonly used in Mexican, Thai, Vietnamese and Malaysian dishes as a souring agent, much like lemon. Popular as an ingredient in Mexican and Asian beverages, soups and sauces, tamarind is also an excellent addition to American dishes and makes an unusual contribution to award winning barbecue sauces!

Usually tamarind paste is mixed with water to create a sauce before use, but a number of recipes call for pure tamarind paste, where it is used undiluted.

Chicken Satay with Peanut Sauce
