Tenuta Castello Organic Arborio Rice is produced by the Vercellone family in the heart of the Po Delta near Vercelli, Italy. This exceptional rice is grown using natural farming methods, cultivated & harvested by hand, completely without the use of chemicals.

 

This superb artisanal rice is processed in traditional mills that leave much of each grain's kernel intact. This certified organic Arborio rice has a higher nutrient content, denser structure, and richer flavor than other rices, as well as superior volume and consistency when cooked.

Risotto-stuffed Morel with Panko Crust
This dish looks beautiful and a little complicated, but seriously, it could not be easier to make. All it takes is a little advance preparation and a few key ingredients.

If you make your risotto the night before (as I did), you can assemble these delicious stuffed morels in a few minutes.

Perfect as an appetizer or serve with a crisp salad for an elegant light luncheon!

Risi e Bisi alla Menta (Rice with Peas & Mint)
This is delicious Italian comfort food at it's freshest and simplest. Traditionally served each spring, Risi e Bisi (Rice with Peas) is enjoyed by young and old alike. The delicate flavor of the peas is not masked by the mild, nuttiness of the Arborio rice and their tender textures pair beautifully as well. Savory, light and absolutely delicious, this dish is best when made with freshly shelled peas, but can be made very successfully with frozen petite peas too. The fresh mint adds an unexpectedly lively, spring-like note.

Risotto with Porcini & Saffron

Tomato-Basil Risotto
If you're familiar with risotto, you may be aware that it can be "dressed up" in many different ways. The legendary combination of tomatoes and basil is one of my favorite ways of serving risotto, and may even be tied with wild mushroom risotto (with white truffle oil) for first place. This risotto recipe, like most of them, is also improved with white truffle oil. This is a delicious accompaniment to the beef tenderloins, and is just another way of making your dining experience extra special.

Risotto with Truffle Oil
This recipe is, in my opinion, the finest thing that can probably happen to rice. A well-prepared risotto will be creamy, chewy, and mild in flavor. This neutrally flavored background is enhanced with the flavors of garlic, shallots, and wine, then punctuated with the wonderfully mysterious flavor of white truffle oil. This is a fine dish served with red meat or poultry. I love it with grilled rack of lamb and a very dry Tuscan wine. I recommend serving the truffle oil on the table, as opposed to mixing it with the risotto ahead of time.
