Saffron is the most precious spice in the world.

True saffron is produced only by the saffron crocus and consists of the delicate, thread-like stigma of the flower.  Each blossom produces only three stigmas, which must be gathered by hand. After harvesting & drying, the stigmas achieve their vivid bright orange-red color. This uniform color is typical of only the highest quality saffron, such as “The Gathering of Saffron”. Select Grade Spanish saffron is the highest grade saffron, far superior to saffron produced in other regions.

"The Gathering of Saffron" Select Grade Spanish Saffron is considered by many to be the finest Saffron in the world. "The Gathering," as it is known, is labelled with an embossed Black Seal, signifying its purity and quality. Saffron is highly prized across the world and is an important ingredient in Mediterranean, Indian and Asian cuisines. The delicate, but inimitable taste and aroma of genuine saffron imparts its distinctive flavor and vivid yellow color to many dishes from Indian pilafs to Spanish paella, French Bouillabaisse and the celebrated Italian dish, Risotto alla Milanese.

Cauliflower Risotto with Saffron
Risotto, the comfort food that can be elevated to gourmet standard with the addition of special ingredients! The naturally creamy texture of a risotto is the result of slow, patient cooking - adding the liquid incrementally and allowing the rice to absorb it slowly. The result is a wonderful texture and the kind of flavor that develops only with time. This risotto is flavored and colored with saffron, the mysterious, pungent and beautiful spice that is so highly prized by chefs.

Risotto with Porcini & Saffron
Risotto is a true Italian classic comfort food. One well-known variation, Risotto alla Milanese, made with saffron and beef stock, is traditionally served with the equally famous veal dish, Osso Buco. Our version adds the rich flavor of porcini mushrooms. This savory risotto not only makes a great appetizer or main dish on its own, but is also the perfect accompaniment to almost any entree.

Chicken Tajine with Olives and Preserved Lemons
Tajine (or tagine) vies with couscous as Morocco's national dish. Tajine is both the name for a vast number of stew-like dishes and the earthenware utensil in which they are cooked. Fish, chicken, lamb or other meats are simmered with an assortment of vegetables, fruits, olives, lemons, herbs and spices to produce richly fragrant, tart, spicy and sweet flavors. Outside of Morocco, traditional tajine pots are hard to find, but we've found that an ordinary covered pot or casserole will work just fine.

Saffron Risotto with Grilled Shrimp
Wonderfully rich and creamy, this classic dish is only enhanced with saffron. Grilling the shrimp instead of boiling it and adding at the end, which is the usual way, adds a new smoky dimension to an already irresistible risotto.

Mediterranean Saffron Rice
Saffron has been considered one of the most precious and expensive spices in the world, mainly due to harvesting. Saffron comes from the threadlike stigma of the crocus flower and must be harvested by hand. These threads are deep red and bright orange in color and have the taste of bitter almonds. Saffron is used to flavor dishes, and a very little bit of saffron goes a long way. A pinch of saffron adds an intriguing flavor to an everyday rice dish.
