Toast Points with Roasted Garlic
A classic that is versatile and easy. Perfect as an appetizer by itself or as a side to a salad or risotto. A few grains of truffle salt will add a new dimension!
Use a medium sized skillet to sauté the onions in butter and brown sugar. Cook until the onions begin to caramelize.
In a separate pan, sauté the garlic in olive oil. As they become tender, add the chicken stock.
Allow them to simmer until the garlic is saturated with stock. Drain the liquid from the garlic and mash the cloves with the cooked onions.
Break the goat cheese up into small pieces and add to the garlic and onion mixture, stirring constantly.
Cook until the cheese melts. Add the chopped basil and mix thoroughly.
Brush the baguette slices with melted butter on both sides and toast under a broiler until golden brown. Remove the toast from the pan.
Spoon the cheese mixture on top of each piece. Garnish each piece of toast with a fresh basil leaf.
