Tossed Fresh Greens
This is only one of an infinite number of ways in which to serve tossed greens. Experiment with your own ideas - watercress, sliced fresh mushrooms, and sliced green onions are other possibilities you can use to make a salad that's just "your own." This version is fresh, colorful and light, but also has a crunchy texture that adds its own appeal.
Ingredients:

8 cups arugula
1 head radicchio, torn into bite-size pieces
4 heads sliced Belgian endive
8-10 crisp radishes, washed, trimmed and sliced
1 thin sliced red onion, broken apart and cut into bite-sized pieces
4 tablespoons pine nuts, toasted
5 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar



Directions:


Combine the first 6 ingredients in a large salad bowl.


Add the oil and vinegar and toss to coat. Season with salt and freshly ground black pepper.
