Varvello Balsamic Vinegar of Modena is created in the heart of the traditional balsamic vinegar region. It is here that wine vinegar aged in the timber vats in the Varvello cellars is blended with the unfermented juice of grapes from Emilia Romagna. Further aging in wood creates a classic Modena Balsamic Vinegar, with a dark reddish-brown color and a balanced sweet/sour flavor.

The result?
A quality Balsamic Vinegar that is good enough for company, but inexpensive enough for everyday use.

Caramelized Wild Leeks (Ramps)
In the south, ramp season begins in early Spring,
just after the ground begins to warm. The first ramps of the year are young and tender with a slender bulb, barely the size of scallions. As the season progresses, the harvest moves north, where allium tricoccum is better known as the "wild leek."
