White Balsamic Vinegar* is the "King" of white wine vinegars: a blend of white wine vinegar aged in oak vats and grape must, the unfermented juice of white wine grapes, usually Trebbiano or Lambrusco.

Thinner in texture with a pale golden color and less sweet than traditional Balsamic, white balsamic "dressing" has a delicate flavor with a clean, mildly tangy finish. It's a bit like regular balsamic vinegar, but without the dark color. So while it has a similar sweet/sour flavor profile like traditional balsamic vinegar, it doesn't color the foods it comes into contact with.

Use White Balsamic Vinegar anywhere you'd use regular balsamic vinegar, especially in dishes where a dark color is undesirable, including seafood, poultry, pasta or salads. But don't think of white balsamic vinegar as a mere substitute for dark balsamic vinegar. The pleasant, delicate flavor of White Balsamic Vinegar makes it a natural in the kitchen. It's perfect for deglazing a pan, in vinaigrettes, in sauces - even desserts. And with a very modest price, you can feel free to use it liberally.

Ginger-Yuzu Mignonette
Best known as a tart & tangy condiment served with raw oysters, Mignonette is a sauce that can also be served any number of different dishes. Traditionally composed mainly of vinegar and black pepper, these days, Mignonette frequently incorporates other ingredients that can put a whole new spin on this classic sauce.

The version featured here has a definite Asian flair - it's almost as much a Ponzu sauce as it is a Mignonette. The use of soy sauce, yuzu juice and ginger certainly adds a different dimension which is nicely complimented by the subtle sweetness of white balsamic vinegar - and the pleasantly hot bite of black pepper.

This is one sauce with all sorts of possibilities - use it on seafood, certainly, but you'll want to try it on steaks, poultry, vegetables and salads as well.

Iceberg Salad with Fennel, Feta and Black Walnuts
To some, Iceberg lettuce is rather 'retro,' recalling bland, uninspired salads of the 50's & 60's.
