Earthy Delights Tossed Arugula Salad

Earthy DelightsTossed Arugula Salad
An arugula salad made extra special with pine nuts, avocado and Champagne grapes. Exotic enough to be served at a formal luncheon or dinner. Easy enough for an informal meal.

One bag of arugula - enough to fill a small serving bowl
1/4 red onion, diced
1 lb. Champagne grapes, rinsed well and separated
2 tablespoons pine-nuts, toasted
1 avocado, peeled and sliced
Sea salt & freshly ground black pepper
Canola oil
Lemon juice
1/4 cup freshly ground Parmesan cheese


Toss together gently, the arugula, red onion, Champagne grapes, avocado, and pine nuts.

Sprinkle the greens with oil and lemon juice. Add the oil and juice in small amounts until you have it seasoned just exactly the way you want it.

Toss again, then sprinkle with the cheese and serve.
