Earthy Delights Recipe
Edie's Tossed Greens
1 bunch red leaf lettuce, rinsed, trimmed, spun dry, and torn into pieces
4 large crispy red radishes, rinsed and sliced
1 avocado, peeled and sliced
1/4 cup torn basil leaves
2 tablespoons pinenuts
1/2 of a red onion, peeled
4-5 tablespoons Spanish Olive Oil
3 tablespoons Minus 8 vinegar
1/4 cup Parmesan
Sea salt & freshly ground Black Pepper to taste.
Toss the lettuce, radish, avocado, basil, and pine nuts together.
Separate the rings in the red onion, and toss them with the salad.
Drizzle the greens with the olive oil and vinegar, then sprinkle with the Parmesan, the salt and the pepper. Toss to combine well.
