Fiddlehead Salad
This is a strongly flavored, robust salad. It goes wonderfully with bland dishes such as roast chicken or other poultry. But it also stands up well to something like a barbecue.
Ingredients:
1 pound fresh Fiddleheads, cleaned and trimmed
2 teaspoons sugar
3 tablespoons dark soy sauce
1½ tablespoons Sesame oil
1½ tablespoons rice wine vinegar
1½ tablespoons toasted sesame seeds
Preparation:
Lightly salt a large pot of water and bring it to a boil.
Add the fiddleheads. Bring the water back to a boil
and cook for only about 3 minutes. Drain well.
Combine the sugar, soy sauce, and sesame oil in a large bowl. Add the fiddleheads and toss well to coat thoroughly. Sprinkle with sesame seeds. Serve warm.
