Homemade Oatmeal Crackers
These are simple and popular. The kids enjoy making them, and
everyone enjoys eating them. They have a light texture - not
at all like mass-produced, boxed crackers - and a neutral
flavor that goes well with cheeses and dips. To dress them
up, try them with a dollop of sour cream, a shaving of
smoked salmon, and a sprig of fresh dill.
Ingredients:
2 Cups rolled oats
1 Cup all-purpose flour
¼ Cup brown sugar
1 Teaspoon baking powder
1/3 Cup butter
½ Cup cold water
Preparation:
Process the rolled oats in a food processor, just ½ cup at a time.
Process until the oats are reduced to a powder. Transfer each
half-cup to a bowl before starting the next. You should end up
with approximately 1½ cups of oat flour.
Add the all-purpose flour, brown sugar, and baking powder to the oat flour. Stir until combined, then cut in the butter with a pastry blender until the mixture is crumbly in appearance.
Make a well in the center of the mixture and add ½ cup of cold water all at once. Stir with a fork until the mixture can be gathered into
a ball, then divide the dough in half.
Roll each half on a floured surface until it's about 1/8 inch thick.
Cut into desired shapes, then place on an ungreased baking sheet.
Prick crackers all over with the tines of a fork, then bake
in a 350 degree oven for 15 to 18 minutes, or until firm.
Cool on wire racks. Makes about 84 crackers, depending on size.
