Strawberries with Balsamic Cream and Mint
These days, even in the middle of winter, the stores seem to be filled with large, beautiful strawberries. Let a little summer sunshine into your life with this simple, refreshing preparation. Delicious over ice cream or shortcake. It's so versatile, use it on custard or muffins.
Wash the strawberries and drain. Remove the stems and cut them into halves or slices.
Wash the mint and pat dry, reserving a few sprigs for garnish.
Remove the remaining mint leaves from the stems and arrange into "stacks". Using a very sharp knife, cut them crosswise into very thin shreds (chiffonade).
Place the strawberries into a bowl and drizzle with the balsamic cream. Sprinkle the mint chiffonade over the top and toss all together.
Let stand at room temperature for 15 minutes. Taste and add sugar, if desired. Gently toss again.
Heap into your best bowls, top with real whipped cream and a mint sprig and enjoy!
