Pasta with Black Truffles, Olive Oil and Basil
There just is something romantic about pasta. And, not to beat this drum too loudly, but pasta just isn't the same without candlelight. Then there are the truffles. Truffles are legendary. They're practically mystical. Though humble in appearance, they are larger than life when it comes to the flavor department. Ingredients:
1/2 cup extra virgin olive oil
1 1/2 tablespoon extra virgin olive oil
angel hair pasta
1 tablespoons fresh basil, cut julienne style
Freshly fresh cracked pepper
1/8 cup freshly grated Parmesan
2 ounces black fresh truffles
Preparation:
Cook the pasta according to package instructions, adding the 1 1/2 tablespoons of olive oil. Drain well.
Toss the pasta with the 1/2 cup of olive oil, half of the basil, and salt and pepper to taste. Mound the pasta in the center of two dinner plates. Sprinkle with freshly grated Parmesan.
Shave the truffle over each serving of pasta, then garnish with the remaining basil.
