Ramps with Eggs
Sometimes the simplest recipes are the best recipes. This is
something I love in the morning with crisp bacon, juice, and hot
coffee.
Ingredients:
1/4 to 1/2 pound fresh Ramps, cleaned, trimmed, and chopped, discarding
the tops
6 large eggs, beaten
Sea salt & freshly ground Black Pepper to taste
3 to 4 tablespoons butter
Preparation:
Parboil the ramps for about 10 minutes, then drain well.
Over
medium heat, using a large skillet, melt the butter, then add the
drained ramps. Add the beaten eggs, stirring constantly until
cooked.
Serve immediately. These eggs are excellent when served
with cornbread.
