Ramps with Eggs
To really make this a special egg dish, sprinkle on some truffle salt just before serving. A perfect way to ease into a Spring day!

1/4 to 1/2 pound fresh ramps, cleaned, trimmed, and chopped, discarding the tops
6 large eggs, beaten
sea salt & freshly ground black pepper to taste
3 to 4 tablespoons butter


Parboil the ramps for about 10 minutes, then drain well.

Over medium heat, using a large skillet, melt the butter, then add the drained ramps. Add the beaten eggs, stirring constantly until cooked.

Serve immediately. These eggs are excellent when served with cornbread.
