Roasted Tomatoes
Try the tomatoes sliced julienne style and tossed with alfredo sauce over pasta.
Ingredients:
12 firm tomatoes
Extra virgin olive oil
Sea salt
Fresh cracked pepper
2 teaspoons dried thyme
Preparation:
Preheat the oven to about 275 degrees F.
Slice each tomato in half lengthwise, without coring. Slice each tomato half in half again from the top to the bottom. You should end up with four equal-sized slices for each tomato. If desired, continue cutting until you reach the size you want. Push or squeeze out the seed pockets.
Lightly brush a baking sheet with olive oil and spread the slices on top. Brush the tops of the tomatoes lightly with the olive oil. Sprinkle with salt, pepper, and thyme.
Place the tomatoes in the oven. They should bake until theyre soft.
