Russian Style Sautéed Chanterelles
This is a beautiful mushroom in every way. They are a lovely pale orange in color, the scent is often described as being similar to apricots or peaches, they have a mild, but saturated flavor which stands up to other ingredients, and they have a chewy texture. This is an old recipe from the Old World. It's easy, it's fast, and it's delicious. The bacon flavor lends itself well either to a breakfast dish, or a side dish at dinnertime.
Ingredients:

4 Bacon slices, cut into 1 1/2 inch pieces
1 Pound fresh Chanterelle mushrooms, cut into pieces
1 Medium onion, sliced
Sea salt & freshly ground black pepper to taste
1 or 2 Tablespoons sour cream


Preparation:

Fry the bacon until it's crisp. Leaving the bacon in the pan, remove all but about 2 tablespoons of the bacon fat.
Place the chanterelles in a large saucepan, add water to cover, and bring to a boil. Drain immediately.
Add the mushrooms and onion to the skillet with the bacon. Cook for about 10 minutes over low heat, stirring constantly.
Add salt and pepper to taste, and add the sour cream just before serving
