Spring Green Salad



Spring Green Salad
Believe me when I tell you that you'll be the first person "on your block" to make this salad if you decide to try this recipe. Even more important, this is a fine quality dish with delicious, interesting, and subtle flavors. Keep everyone guessing about the sweet potato puree. It's a remarkably delicious garnish.
Ingredients:

2 yellow onions with enough vegetable stock to cover in a medium saucepan
4 eggs, boiled medium
1 cup fava beans, blanched and diced
1/2 cup extra virgin olive oil
2 tablespoons butter, melted
one pinch allspice
Sea salt & freshly ground Black Pepper to taste
2 bunches Fresh Ramps, cleaned, trimmed, and quickly sautéed
12 stalks of asparagus, cleaned, trimmed, and blanched
1 large roasted sweet potato, pureed with a portion of the onion-vegetable liquid


Preparation:

Cook the onions in the vegetable stock and reserve the liquid.
Separate the egg whites from the egg yolks.
Chop each finely and mix together with the diced fava beans.
Whisk the olive oil together with the butter, onion liquid, the allspice, and the salt and pepper.
Toss the ramps and the asparagus with the mixture.
Drizzle the sweet potato puree over the top and serve.
