Toast Points with Roasted Garlic
I'm including this recipe because everyone loves it. It's an excellent accompaniment to the recipe for bleu cheese risotto.
Ingredients:

1 red onion, peeled and quartered
2 tablespoons butter
6 tablespoons dark brown sugar
8 large garlic cloves, peeled and minced
1 teaspoon chicken stock, mixed with 1/4 cup water
8 ounces goat cheese (unflavored)
Fresh basil leaves, chopped, with some additional leaves to use for garnish
1 baguette French bread, cut diagonally in 1/4 inch slices
Sea salt & freshly ground black pepper


Preparation:

Use a medium sized skillet to sauté the onions in butter and brown sugar. Cook until the onions begin to caramelize.
In a separate pan, sauté the garlic in olive oil. As they become tender, add the chicken stock. Allow them to simmer until the garlic is saturated with stock. Drain the liquid from the garlic and mash the cloves with the cooked onions.
Break the goat cheese up into small pieces and add to the garlic and onion mixture, stirring constantly. Cook until the cheese melts. Add the chopped basil and mix thoroughly.
Brush the baguette slices with melted butter on both sides and toast under a broiler until golden brown. Remove the toast from the pan and spoon the cheese mixture on top of each piece. Garnish each piece of toast with a fresh basil leaf.
