Turkey and Wild Rice Soup
This is a simple, classic soup. Many people underrate soup, which can actually be a very elegant luncheon when served with a good salad, fresh crusty bread, and a cheese board with fresh fruit. If you like things spicy, consider adding a dash of Tabasco - just enough to keep people wondering about that "extra" flavor.
Ingredients:
1 turkey carcass
3 carrots, chopped
1 can cut green beans, drained
1 cup chopped celery
1 cup chopped fresh spinach
1 cup chopped cabbage
2 cups wild rice
Sea salt & freshly ground black pepper to taste
Preparation:
Place the turkey carcass, complete with bones, juices, and skin, into a large soup kettle. Add all of the ingredients and cover with water.
Bring the soup to a boil and permit it to continue cooking for at least three or four hours. Continue adding water as it evaporates.
Permit the soup to cool. Pick out all unwanted skin, cartilage, and bones.
Taste for seasoning and add more salt and pepper if needed. Reheat and serve piping hot.
