White Bean Dip
Here's a simple do-ahead appetizer, excellent served with your homemade crackers or toasted pita bread.
Ingredients:
¼ Cup soft bread crumbs
2 Tablespoons dry white wine
One pound cooked cannellini beans, rinsed and drained
¼ Cup slivered almonds, toasted
3 Cloves garlic, minced
2 Tablespoons lemon juice
2 Tablespoons extra virgin olive
oil
1/8 Teaspoon ground red pepper
¼ Teaspoon Sea salt
2 Teaspoons snipped fresh oregano or basil leaves
Preparation:
Combine bread crumbs and wine in a small bowl and set aside.
Combine the beans, almonds, garlic, lemon juice, olive oil, ground red pepper, and salt in a food processor or blender. Cover and process or blend until the mixture is almost smooth.
Add the bread crumb mixture and process or blend until smooth. Stir in snipped oregano or basil.
Cover and refrigerate for 3 to 24 hours so the flavors can blend.
