Wild Morels & Ramps Sautéed with Chicken Breast
This is an elegant way to serve chicken, and not at all
difficult. If you really want to create a spectacular
dinner, serve this with a wonderful risotto. Bring out the
truffle oil.
Ingredients:
1/2 pound
fresh Morel
mushrooms, washed, trimmed and cleaned
1 pound chicken breasts, skinless and boneless, rinsed and
patted dry
Sea salt & freshly ground black pepper
1 tablespoon extra virgin olive
oil plus 1/2 tablespoon
2-3 tablespoons chopped fresh
ramps
1/2 cup white wine
3 tablespoons butter
Preparation:
Season the chicken with salt and pepper.
In a sauté pan heat 1
tablespoon of olive oil and add the chicken breasts. To avoid
crowding, sauté the chicken in batches. Cook the chicken until
it's well browned on both sides, then remove. Be sure to keep
it warm.
Using the same pan, add the remaining 1/2 tablespoon of olive
oil. Add the morels and sauté for about three minutes. Add the
ramps and continue cooking for another two minutes.
Add the
chicken back to the pan. Add the wine. Cover, and continue
cooking at a simmer for about three minutes, or until the
chicken is cooked through. Swirl in the butter and serve
piping hot.
