Quinces with Vanilla
Peel, core and slice the quinces - place in acidulated water to prevent discoloration. Place in a large non-reactive pan, cover with water and add about 2 tablespoons sugar per quince to the liquid. Add Quince slices and bring to a boil. Reduce heat and simmer until tender. Remove from heat and add 1 tsp vanilla. Allow to cool before eating.
