Truffled Egg Salad Tramezzini
"Tramezzini" are dainty little crustless sandwiches that are served everywhere in Italy. They can be made of just about anything - cheese, anchovy butter, tuna and so on. Our version is filled with a rustic egg salad that looks homey but tastes classy.
Shell and hand-chop the hardboiled eggs and place in a large bowl (chopping the eggs results in a much better texture than mashing them).
Add the mayonnaise, mustard, olive oil and truffle salt and mix well.
Cut each slice of bread in half diagonally. Spoon the egg salad generously on each slice. Tuck a leaf or two of the watercress or arugula into the egg salad, if using.
Drizzle each open-face sandwich with a drop or two of the truffle oil and serve.
