Ponzu Sauce II

Ponzu Sauce II
This is the classic Japanese dipping sauce using yuzu juice.


¾ cup mirin (sweet rice wine)
½ cup rice vinegar
4 Tbsp soy sauce
½ cup bonito flakes
¼ cup yuzu juice
1 Tbsp grated lemon or lime zest


Combine the mirin, vinegar, soy sauce, zest and bonito flakes in a saucepan and bring to a boil over medium heat. Remove from the heat and let cool.

Strain the sauce into a bowl; discard the solids. Stir in the yuzu juice.


Cover tightly and store in the refrigerator for up to a week. Taste before serving, adding more yuzu juice if desired.
