Put the chocolate discs in a large, heat-proof bowl.
Heat the cream in a microwave or on the stovetop until it just begins to foam.
Pour the cream over the chocolate and set aside for about 5 minutes. Using a heavy wire whisk, gently mix the chocolate/cream mixture until it is completely blended and is smooth and homogenous. Add the chipotle powder, sugar, cinnamon, salt and vanilla extract and mix again thoroughly.
Allow to cool slightly and taste for seasoning. Place in a fondue pot or better yet, a crockpot. Be careful that it does not scorch.
This may be made a day or two in advance. Carefully re-heat it in the microwave in 1 2 minute bursts, stirring between each one until it is warm and smooth.
Dip cubes of pound or sponge cake, fresh strawberries, grapes, kiwis or bananas for a fun and easy dessert!
