Hackleback caviar, harvested from the wild hackleback sturgeon (Scaphirhynchus platoryhnchus), is often called the American equivalent to sevruga caviar, though much less expensive. Hackleback caviar makes an interesting change from other caviars, since the velvety black eggs are much larger with a deep and buttery-sweet, nutlike taste. We highly recommend American Hackleback as an excellent wild, sustainable alternative to endangered sevruga sturgeon caviar from the Caspian Sea.
