Wild Rice with Apples & Dried Cherries
This dish is very easy to prepare and provides a new, delicious, and interesting way in which to serve rice. The combination of the apple and curry powder creates a brand new flavor that is absolutely delicious. This is especially good served with poultry.
Ingredients:

2 tablespoons extra virgin olive oil
2 tablespoons finely minced onions
1 tablespoon curry powder
1 apple, peeled, cored, and chopped into 1/2 inch pieces
1 cup chopped fresh Chanterelle mushrooms
1/4 cup dried cherries
1 1/2 cup cooked wild rice
Sea salt & freshly ground Black Pepper to taste


Preparation:

Add olive oil to a sauté pan. When the oil is hot, sauté the onions and curry powder until the onions are translucent.
Add the apple, mushrooms and cherries. Cook until the mushrooms are tender.
Add the rice and stir-fry until the rice is hot and tender.
Add salt and pepper to taste and serve immediately.
