Crunchy tyrosine crystals (amino acid clusters that form in well-aged cheese) are often disbursed throughout this aged cheddar. This amazing cheese is produced in 60 pound wheels which are wrapped in cheesecloth and aged 24 months for an outstanding flavor and texture.
