Winter Cherry Salad
1 cup dried cherries
2 kiwi; peeled and sliced
2 large naval oranges; peeled and sectioned
1/4 cup orange juice
1/4 teaspoon fresh ground cinnamon
1/4 cup chopped salted Almonds
Place dried cherries, kiwi slices and orange sections in a large salad bowl.
Combine orange juice and cinnamon in a small bowl and mix well. Pour spiced orange juice mixture over the fruit mixture and mix gently.
Refrigerate, covered, 1 to 2 hours, stirring occasionally. Sprinkle with Almonds just before serving.
Recipe makes 6 servings.
