Italian Sausage Soup/Pasta Morph
Yup, this recipe really does "morph," adapting to become either a
hearty soup or an elegant pasta course with very little trouble. This is a great course to serve with the arugula salad.

Ingredients:
1 pound Italian sausage
2 medium yellow onions, peeled and chopped coarsely
2 small fennel bulbs, trimmed, cored, and thinly sliced
2 cloves garlic, minced
1/4 teaspoon fennel seed
Soup Part:
4 cups chicken stock
1 can (14 ounce) Italian plum tomatoes with juice
1 cup uncooked small pasta
1 can (14 ounce) canellini beans, drained and rinsed
1/2 cup loosely packed Italian parsley leaves, roughly chopped
Sea salt & freshly ground Black
Pepper
Preparation:
Remove the casing from the Italian sausage. Place the sausage in a
large soup pot and heat over medium, stirring frequently, until
browned. This should take five to seven minutes. Drain on paper
towels to remove fat.
Add the onions, fennel, garlic, fennel seeds, and mix well. Cover and cook, stirring from time to time, until the onions and the fennel begin to wilt and soften. This should take about 15 minutes.
Remove 1/2 of the mixture and reserve it for the "Pasta Part."
Add the chicken broth and the canned tomatoes to the "Soup Part,"
breaking the tomatoes apart with a spoon. Bring to a boil, then add
the small pasta and bring back to a boil. Once the mixture is
boiling, reduce to a simmer and cook for about eight minutes, or
until the pasta is just about cooked.
Add the canellini beans and the parsley. Continue cooking until it develops a rich flavor, and the pasta is cooked through. Adjust for salt and pepper.
"Pasta Part"
1 pound pasta, cooked al dente,
one cup of water reserved from cooking sausage, onion, and fennel mixture
Sea salt & freshly ground Black
Pepper
1/2 cup unseasoned break crumbs
1/4 cup finely grated parmesan
Toss the pasta and the reserved Italian sausage mixture in a large
bowl. Using just a small amount at a time, add the heated pasta
water, stirring constantly, until a good sauce-like consistency is
obtained. Season with salt and pepper and top with breadcrumbs and
cheese.
