Matsutake means 'pine mushroom.' Thought to be an aphrodisiac by the Japanese, this tradtional delicacy is a favorite of Japanese chefs, whose preparations are well-suited to its strong, spicy-clean fragrance and taste. The unique flavor of the matsutake is owed to the rare conditions under which it grows - under the base of pine trees between 20 to 60 years old and never in the same place twice. Their magnificently spicy aroma, similar to cinnamon, enhances wild mushroom dishes and make great stuffed mushrooms. They are high in protein, low in fat and rich in vitamins B1, B2, and D, and are believed to have many healthful properties.

Chawan Mushi with Matsutake Mushrooms
To most Americans, the word "custard" usually means sweet, eggy and often bland desserts. The traditional Japanese favorite, called "Chawan Mushi" is something quite different. This is a delicate, savory egg custard that may contain any number of different ingredients, mostly depending on the individual cooks who make it.

This dish is so popular that special lidded chawan mushi cups are readily available in most Asian markets. If you don't already have these special cups, there's no need to buy them just for this dish. Just use any heatproof tea or coffee cups, regular custard cups or ramekins.

We've modified this dish slightly to accommodate Western tastes by adding an extra egg for a firmer, custardy texture. If you prefer the traditional lighter, soupier version, just use three eggs instead of four.

Wild Mushroom Wontons - Basic Recipe
Wontons are fun. They’re great party food, perfect as appetizers and for special occasions. But wontons are, at their heart, simple Asian comfort food. While fillings can vary, the basic technique remains the same: a mixture of meat, seafood, vegetables or mushrooms (or any combination thereof) is wrapped by a thin sheet of dough, tightly sealed at the edges. The wrapper is usually made of wheat flour, egg, a pinch of salt and a little water – very similar to Italian pasta dough. We chose to make our wontons, not with the more typical shiitake mushrooms, but with something a little more exotic – the prized matsutake mushroom. Why not? With a surplus of beautiful “pine mushrooms” on hand, we thought we’d splurge.
