Celebrated for its use in ice creams, sorbets, cakes and other desserts, the sweet-as-sugar honey truffle is one of the most unusual truffles in the world. Found primarily under black locust trees which grow in the rich, sandy soils along the Danube River in Hungary, the pale, grayish-white honey truffle is as delicious as it is unique. This rare sweet truffle makes a spectacular ending for a one-of-a-kind truffle tasting menu.

 

The honey truffle (Mattirolomyces terfezioides) has a long history in the gastronomy of Eastern Europe. It was first documented in 1588 when a Hungarian magistrate ordered the protection of a forest known for the production of Hungarian white truffles.

 

The consumption of these prized truffles soared along with the prosperous economy of the Austro-Hungarian Empire. Tons of Hungarian truffles were brought to market in the Austro-Hungarian capital of Vienna, but the truffle boom went bust when two World Wars discouraged truffle commerce and consumption, declining further during the Communist era as truffles, considered to be a symbol of bourgeois decadence, were banned.

 

The flavor of this unusual truffle is unique.  It begins with a very pleasant, mild mushroomy flavor on the tongue, but then develops into a long, lingering honey-sweet finish.  Use sparingly - a little of this amazing truffle goes a long way.

Store fresh truffles in the refrigerator submerged in a container of uncooked rice or wrapped loosely in paper towels. Fresh truffles are best when used within a week or less after they arrive.

Honey Truffle Arborio Rice Pudding
Over the past few weeks, we’ve been enjoying the newest truffle on the scene, the Hungarian Honey Truffle (Mattirolomyces terfezioides). Of course, it’s not a “new” truffle – it’s been around forever, but it’s new to most American truffle-lovers, and there aren't many, if any recipes around. We started by thoughtfully tasting a paper-thin slice of honey truffle. In some ways, the honey truffle is like other mild-flavoed truffles; it starts off with a very pleasant, mushroom-like aroma and flavor, but a difference soon becomes apparent. After a moment or two on the tongue, the honey truffle develops a delightfully long, sweet honey-like finish. The more we tried it, the more we liked it. Definitely unusual and eminently intriguing! Is it a dessert? Is it a risotto? Perhaps it’s a bit of both. In any event, it’s a keeper.

Honey Truffle Sponge Pudding Cake with Wild Berries
